Carrot Cake Cupcake

Last week I had another Largehearted Lit event at Word bookstore in Greenpoint. It had been awhile since I made Carrot Cake Cupcakes, so I busted out my trusty copy of “Martha Stewart’s Baking Handbook” and whipped up a batch of her Carrot-Ginger Cupcakes.

This is hands down my favorite Carrot Cake recipe. I omit the raisins (I am of the opinion that raisins do not belong in cupcakes), and what’s left is just fantastic.

I attempted to make a pretty orange and white swirled frosting, but I realized too late that I had run out of large piping bags. When I do swirls, I fill up two small piping bags with different colored frosting and then insert both of them in a much larger piping bag to create a dual piping bag of sorts. I shuffled through the mountain of piping bags I have only to discover that I was out of the large ones. So I tried to wing it and just put the two frostings in a small bag, but it didn’t *quite* work. Ah well. Lessons learned.

I’ll be back at Word on May 22nd for another Largehearted Lit event. My plan is to make Vegan Root Beer Float Cupcakes and non-vegan Creamsicle Cupcakes. Stop on by!

Upcoming Events Where You Can Find My Baked Goods

The Brooklyn Baker is at it again. This coming week, I’ll be baking for two (count ‘em, two!) literary events at Word bookstore in Greenpoint, Brooklyn.

Tuesday night, you can find my Sweet Potato Cupcakes with Toasted Marshmallow Frosting and Vegan Pumpkin Cupcakes with Vanilla ‘Butter’cream Frosting at a Largehearted Lit event featuring authors Nathan Larson and Joshua Cody. Wednesday night, you can sample Blueberry Scones and Lemon Scones for the book release party for Leanna Hieber and her new book “Darker Still”. Leanna is bringing Earl Grey tea to go with the scones!

Doukhobor Baked Goods at Largehearted Lit

As you might remember, a couple of weeks ago I posted about my friend Alina Simone releasing both a book and an album at the same time. Another friend, David over at Largehearted Boy, hosts a monthly event at Word bookstore in Greenpoint, Brooklyn. For June’s event, he welcomed Alina Simone as well as Wesley Stace and a special performance by Amanda Palmer.

You may also remember that Alina asked me to provide refreshments for the event, in the form of Doukhobor baked goods. I selected two items from her Doukhobor cookbook and crossed my fingers. Rob and I went over to Alina’s apartment (she has a bigger kitchen than I do) and about five hours later I had created Apple, Raspberry and Apple/Raspberry Fruit Tart Pastries as well as Orange Cookies. They got good reviews from Alina and Rob and on the night of the event, there were only four Apple tarts left out of the three dozen tarts and three dozen cookies. I would say they were a hit!

It was actually pretty cool hearing Wesley Stace (AKA John Wesley Harding) tell me that my Raspberry Tarts were delicious. Yay!

As a side note, because we drove Alina to the event in our car, we ended up driving Alina, Amanda Palmer and Eugene Mirman home, as we all live in South Slope. It was one of the more surreal nights I’ve had in New York.
